This February, ITC Gardenia’s Cubbon Pavilion is celebrating a cuisine crafted from the rich heritage of Punjab. Chef Arshdeep Singh (who is from Ludhiana) is bringing to us a taste of his cherished family recipes and the forgotten flavours of the North.
The Land of Five Rivers Food Festival is part of ITC Hotel’s ‘Kitchens of India’ series which aims to source the forgotten recipes from different regions of the country. This food fest is on till February 25 – what are you waiting for!
Authentic to the very essentials, the exquisite menu featured Punjabispecialtiess such as Patiala Shahi Pulao, Amritsari Tari Macchi, Zimikand ke koftey, Mathi-Channe, Annardana papad Choley, Besan ki Subzi and much more. Making the culinary journey even more wholesome were the specially curated beverages like Lassi-e-Khaas, Patiala Peg & Goli Banta.
Chef Arshdeep Singh who has conceptualized the entire menu. Behind him is his guiding force Chef Yogen Datta, Executive Chef, ITC Gardenia!
Starters included Qazlaeela Talli (Fish), Chirga (Chicken) and Laal Mirch Paneer Tikka. True to his word, there is so much more to Punjabi food!
Qazleela Talli and Chirga are different versions of Fried Fish and Tandoori chicken made with batter respectively. Both were excellent.
Paneer Tikka is a simple food, but this version has cottage cheese that is ever so soft mixed with a zesty lal mirch.
Desserts were so delightful. Gulab Jamun, Gajar Ka Halwa and Kulfi with Rabri!
